Description
Quinoa, amaranth and buckwheat are defined as "pseudo-cereals" because, although belonging to families other than Graminaceae, they can be cooked in the same way and it is possible to obtain flours. In addition to being a predominantly low-glycemic source of carbohydrates, they are gluten-free and one of the most complete vegetable protein sources. The pseudo-cereals contain all the essential amino acids, are rich in vitamin E and provide mineral salts, including iron, potassium, magnesium, phosphorus, manganese and zinc, which are essential for the proper functioning of the whole organism.
